Katie Alexander’s Weetbix Slice

1 egg
1/2 cup sugar
3/4 cup coconut
2 tbsp cocoa
1 cup self-raising flour
125g margarine or butter
3 Weetbix

Mix all dry ingredients together – crumble up Weetbix. Melt butter and add with beaten egg. Mix thoroughly. Press into well greased lamington tin. Bake at 180 deg C/moderate oven for 20 minutes. When cool, top with melted chocolate. Slice when chocolate is set. Serves lots!! Depending how big you slice it!

Abbey May Wakefield’s Choclate Café Cake

175g Butter
1 1/2 cup caster sugar
2 eggs
2 tbsp golden syrup
1 1/2 cups self-raising flour
1 tsp baking soda
1/4 cup cocoa
1 1/2 cups milk

Beat together butter and sugar until mixture is light and creamy and butter is pale. Add eggs, one at a time and beat well after each addition. Beat in golden syrup. Sift together flour, baking soda and cocoa and fold into creamed mixture, alternately with milk. Turn into well greased lined 20cm tin. Bake 160 deg C for 1 1/4 – 1 1/2 hours. Cover with icing – YUM!

Thomas Steventon’s Pancakes

100g plain flour
1 egg
300ml milk
Vegetable oil for frying
Sugar and lemon juice (or maple syrup, my favourite)

Sift the flour into a bowl. Break the egg. Beat in the milk. Whisk the mixture to remove any lumps. Heat a little oil in a frying pan – when hot, pour off the oil. Pour in enough of the batter to thinly coat the base of the pan. Cook for a few minutes, until golden then toss it over and cook the other side. Transfer the pancake to a plate and add toppings as desired.
